Apricot and honey toasted meusli


Yum yum meusli. I love a good meusli, but I am trying out the blood type diet and seein as I am a type "O", it is hard to find one suited to my needs. Also, because my mum is giving this a go too, I thought I'd try and make some myself! I do so love being creative with food!

So here's a wee recipe.

What you need:

400 grams of Rye Flakes
about 2 cups of Millet Puffs
about 2 cups of Rice Bubbles
2 tablespoons of honey
2 tablespoons of jam
oil for greasing baking trays
100 grams sunflower seeds
100 grams sesame seeds
100 grams pumpkin seeds
100 grams slivered or sliced almonds
6 or 7 dried apricots
5 or 6 dried plums or prunes
3 dried figs
1/2 a cup of dried cranberries

What to do :

Preheat the oven to 175˚C

Melt 2 mad big tablespoons of honey in the microwave or on the stove with two mad big tablespoons of your favorite jam, I used apricot and ginger.

Mix in a biiig bowl 400gms of wholegrain rye flakes, 100gms sunflower seeds, 100gms pumpkin seeds, 100gms sesame seeds and 100gms slivered almonds.

Add the sweet jammy honey goodness to the biiig bowl and mix slowly till everything looks honey coated.

Prepare some flat baking tins, like a couple of slice tins or something, by greasing them with some oil, I just used regular canola oil, but you might have something yummier, like rice bran oil or peanut oil or even sesame oil.

Spread the meusli out so that it is about 1 cm deep all round, and place the trays in the oven. Check on them every 10 minutes or so, and stir. When the pumpkin seeds are just turning brown and before the Rye flakes look burnt take them out of the oven to cool a while. stir every now and then so the mix doesnt stick to the tray.

While you are cooking the meusli, start chopping up the apricots, prunes and figs.

Put the millet puffs and the rice bubbles in the biiig bowl and mix, add the toasted meusli mix little by little and mix, then finally add the dried fruit.

This makes about a 4 litre ice cream container worth of meusli... I like to make big batches!

Serve with soy milk and a chopped banana, et voila a yummy breakfast, good for your tummy! I'll post pictures soon.
